Owners Ken, 68, and Julie, 61, Woods purchased the bakery in 2011 after moving to a Bega district farm from Canberra the previous year.
Ken had always been a local though, having started his baker apprenticeship at 14 years old at Norris' Bakery, which was where the Direct Chemist on Carp Street is now located.
"The people were so excited to have a bakery back in town, it was bordering on years since there had been one," Julie remembered fondly about those early days.
Unfortunately Ken and Julie have had to sell the bakery due to Ken's health issues. He will be undergoing open heart surgery on May 19.
"It's a good time to get out. It feels like a weight off my shoulders that I got my husband out in a car and not a coffin," said Ms Woods.
Although the couple were torn about selling their much loved bakery and will miss the familiar and friendly faces the most, Ms Woods said she felt relieved and elated to start a new chapter.
"We've had one holiday in 20 years. We are so happy that we will be able to have a weekend back so we can go and do this or that."
The couple have been working six or seven days a week for the duration of their business venture.
Later this year they will be moving to Orange to care for Julie's elderly parents.
Their long term plans are to become grey nomads and travel Australia.
"My husband wants to go into the interior and look into gold and opal mining. Me, I just want to sit down and read books, I don't care where I am," she said.
The good news for Bega is that the bakery won't be closed down.
New owner Michelle Brown moved to Bega over a year ago. Although originally from Gippsland, she often holidayed in the area.
When her son married a Bega woman, she decided to make the move north.
Ms Brown has always worked in bakeries, but has been working with Ken and Julie over the past six weeks to gain insight into the running of the bakery and to meet the Woods' loyal customer base.
Ms Brown has big plans for the bakery, with a refurbishment getting underway next week.
"We are going to do lots of refurbishment and make it more somewhere you might want to meet your friends for a meal.
"I want to bring in some younger families with kids in and give it a nice ambience as well as add some new things to the menu.
"There will be bigger tables to fit more people and we will have a sit down menu.
"We will do takeaway after 5pm until 8pm at night and are going to be open 7 days a week."
She will also be introducing Amanti coffee and a bain-marie with fresh and cooked food available.
Ms Brown plans to set up a fresh sandwich bar and she said she hoped her son would start to bake bread fresh onsite again.
"I love working in bakeries, there's always familiar faces, everyone comes together out the back and it's not a stressful job," said Ms Brown.
The bakery will be renamed to Ellie Mae's Cafe and Bakery and will be reopening on May 3.
