In Adam Liaw's Roadtrip for Good, which will premiere on SBS, the popular cook, author and TV presenter visits fire-affected regions as they spring back to life.
Over four episodes, Mr Liaw will unearth some of the best food Australia has to offer, making mouth-watering Asian-inspired dishes with the produce he collects along the way.
He meets with locals and discovers that these resilient communities are rebuilding and ready to welcome visitors back with open arms.
On of the locations he visits is Gary Rodley's oyster farm in Tathra.
An SBS spokesperson said when last summer's bushfires hit, the entire east coast of Australia was covered in a thick cloud of smoke, and when the ash settled in the river systems it helped produce algal growth and in some areas this actually helped fatten the oysters.
At the oyster farm, Mr Rodley tells Mr Liaw why this happened.
Also, Mr Liaw collects some Sydney rock oysters to take home to make the hawker centre classic, oyster omelette.
He also visits a garlic farmer and organic honey producer on Kangaroo Island and makes sizzling garlic butter prawns and honey chicken; a cheesemaker and vintner in the Adelaide Hills and makes billy kee pork; in East Gippsland and Mallacoota he collects eggs and abalone; and in Batlow he uses apples to make Chinese toffee apple fritters.
"2020 has been a tough year for everyone, but few places have been more affected than regional Australia," Mr Liaw said.
"Before COVID, there were bushfires and before bushfires there was drought. Adam Liaw's Roadtrip for Good is about telling their stories and reminding people what's great about regional Australia.
"Their resilience in the face of so much is truly inspiring, and if we can help them by safely getting out to these areas and boosting our domestic economy in the process it's a triple win.
"A win for the regions, a win for those of us who get a great holiday, and a win for Australia as a whole."
Adam Liaw's Roadtrip for Good premieres on SBS Food on December 2 at 8.30pm.
