The 55-year-old Bega woman has been accused of murdering 26-year-old Bega resident Marnie-Lee Cave in October 2015.
The retrial, being held in Wollongong, comes after a jury in Bega was unable to reach a unanimous verdict in February 2018.
A new jury was empanelled on Monday and the trial estimated to take 20 days.
Ms Cave died from strangulation, before her body was thrown off Handcocks Bridge at Mogareeka.
