Bega Cheese quality supervisor Phil Tatzenko said there are many different flavour profiles, even within the cheddar character.
“But to be really good, it has to be a balanced flavour between acidity, sweetness and savory,” he said.
The Heritage Reserve Vintage is only sold on site at the Bega Cheese factory.
“It was conceived to be something special and different for visitors of the Heritage Centre to take with them.”
A panel of technical experts, chefs, retailers and flavour specialists will reveal the top product in each dairy and cheese category in February next year.
