It is the fourth year holding an extremely successful cheese section at the event.
There are now have 10 classes. Exhibitors need to deliver their entries to the Cobargo Showground on Friday between 8am and 7pm.
Public explanation of the judging will occur at 11.30am on Saturday, in front of the pavilion.
World class cheese judge Russell Smith will return this year.
Mr Smith was extremely impressed with the quality of the exhibits last year and local cheesemakers aim to exceed his expectations again this year.
