The prize-winning owner of Mountain Side Meats will take on some of the country’s best this Sunday at The Butcher Wars as part of Meatstock, The Music and Meat Festival in Sydney.
Well-known locally for his success in various national Sausage King Competitions, he will be pitted against 20 of best butchers from around Australia and New Zealand in the invite only competition.
“To be included in such a crack field of butchers from around the country is a honour,” he said.
The butchers will do battle at the Davidson Pavillion at the Sydney Showgrounds.
They will each have 45 minutes to present meats on a supplied board from a full side of lamb and a saddle of pork.
The competitors will be able to use garnishes, seasonings including herbs and spices, as well as sauces and marinades.
They will be judged on final appearance, creativity, technique and speed with the winner crowned the inaugural Sydney Butchers Wars Grand Champion.
“It’s going to be a pretty fierce competition,” Nathan said.
“But you have to be in it to win it. Just being asked to take part is a huge honour.
“Winning would be nice but it is also about learning and getting some new ideas for the shop. It will be an experience.”
Organisers have already sold 10,000 tickets to the two-day festival which also features a number of musical acts, the Sydney barbecue and barber wars, the Cool Smoke Barbecue School, a variety of food experiences and an expo.
Nathan’s competition starts at midday on Sunday.
