The long-awaited Byron Bay farm project from the team at Sydney's Three Blue Ducks has finally opened, the Bronte boys getting a crash course in country skills.

"A fox got into the chicken house and killed 57," says co-owner Mark LaBrooy.
The ambitious project opened its restaurant and produce store last Friday. LaBrooy admits the tiny vegie patch at The Ducks in Bronte didn't adequately prepare them for the scale of the 34 hectares of farmland occupied by the Three Blue Ducks Byron Bay.
"We are already getting lettuce and leafy greens off the farm, next week we'll harvest sweet potatoes and after that beetroot," LaBrooy waxes.
The farm is already producing beef, and pigs that they serve with lemongrass and ginger, and plan to also roast suckling-style.
Coffee-spiced brisket, kangaroo tartare and free-range chicken in a bun have all made the opening menu.
"You can eat in the restaurant or get takeaway and go and explore the farm," says LaBrooy. "We're all still surfing, having a good time and getting on. It's great," he says of the rural adventure.
Three Blue Ducks Byron Bay can be found just out of Byron at 11 Ewingsdale Rd, Ewingsdale.
