Five others were injured in the collision, including a child.
The collision occurred 3km north of Bega on a right-hand bend.
The deceased was in the front passenger seat of a Toyota vehicle and the 49-year-old female driver is currently in Bega Hospital being treated for a fractured ankle.
A NSW Police Media Unit spokesperson said the other vehicle, a Holden Commodore, contained two women, one man and a 10-year-old girl.
The 61-year-old female driver has serious injuries and is being treated in Canberra Hospital.
The three passengers are also in Canberra Hospital with multiple injuries.
Emergency services attended the scene around 9.20am.
The Snowy Hydro SouthCare helicopter and Bega’s Volunteer Rescue Association crew were also called to the scene.
Bega VRA deputy captain Bowen Finnerty said his crew’s main aim was to support Bega Ambulance personnel.
Mr Finnerty said five crew members were sent out in the VRA’s main rescue and quick response vehicles.
“We assisted Bega Ambulance crew in extricating passengers out of the vehicles,” he said.
“We gained access through the side of the car, assisting paramedics in getting another passenger out.
“Our main job was to assist paramedics, because they were short on crew.
“We were there to stabilise and it was a job well done.”
Kate Van Haalen from Snowy Hydro SouthCare said a crew conveyed one of the collision's victims from Bega Hospital to Canberra Hospital.
The rescue helicopter's medical team spent time in Bega stabilising the patient before transferring them.
“The patient had head and chest injuries and is the most critically injured of those conveyed by ambulance to Bega Hospital,” she said.
The Princes Hwy remained closed until around 6pm Tuesday.
Police have conducted forensic examination of the crash site and are still investigating the circumstances.
If anyone witnessed the collision they are urged to contact Bega police detectives on 6492 9999.
